Ingredients (for 4 towers):
300g crab
100g crayfish tails
1 avocado
4 spring onions
1 red onion
½ a cucumber
10g chives
10g parsley
50ml mayonnaise
4 shallots
1 lemon (both zest and juice)
Method
- Pick the crab meat and dice the shallots
- Melt a knob of butter in a pan before adding the shallots, crab and chopped chives
- Stir until the shallots are soft
- Add mayonnaise, crayfish tails and lemon zest, then season with sea salt and black pepper
- Dice the tomatoes, onions, spring onion and cucumber, then mix together with the chopped parsley and pesto
- Blitz avocado with lemon juice until smooth, then season
To plate up:
- Using a metal ring on the plate, place the veggie mixture inside, before adding the avocado with the crab mixture on top
- Serve with extra avocado on the plate and garnish with pea shoots and a drizzle of extra virgin olive oil
